Chocolate pudding for breakfast?! Oh, heck yes!
Guilt free! Antioxidant rich! Chia pudding is exactly what we need to wake up to every morning. No empty calories here. This delicious dessert is packed with all the essentials: protein, good fat that is filling and heart healthy, and natural unsweetened cacao that will leave you with no regrets. If you’re in a hurry, put all the ingredients in a blender and pop in the fridge while you’re getting ready. Otherwise, soak the chia seeds in yogurt overnight and watch this superfood miraculously turn itself into a thick gel that will give you six times the calcium of milk, more omega-3 than salmon, and a burst of magnesium, potassium, and antioxidants that far ex(seeds) some of your faves. *cough, cough* blueberries.
1. Combine yogurt and chia seeds in a bowl. Cover and place in the refrigerator for 15 minutes or overnight. The longer chia seeds are able to sit in liquid the more they absorb=thicker pudding!
2. In a blender combine avocado, vanilla extract, cinnamon, and cacao powder.
3. Mix chia pudding with chocolate avocado. For a smooth consistency, combine all ingredients together in a blender. If you desire texture, mix using a spoon.
1/4 C chia seeds
1 tbsp cacao powder, unsweetened
1/2 tsp vanilla extract
1/2 tsp cinnamon
2 C vanilla yogurt
1 halve avocado
